I've kept an NDA with the COH beta...but I think the pendulum is swinging the other way.

I'm quite sure they have some kind of overall testing plan in place at this point. Whether and/or when there will be NDAs involved basically boils down to how they'll handle the difference between what they might call a "closed beta" versus an "open beta".
They'll probably begin initial beta testing with only a handful of proverbial "friends and family". There might be as many as few a dozen people testing the game at that point (beyond the actual Devs themselves) and it's quite likely all of those people will be under NDAs. By the time that testing phase is done they'll likely move on to some kind of "supporter beta" which would include people who paid for that privilege via the Kickerstarter events. This portion of beta testing may or may not be under NDA. Towards the end they may eventually open up beta testing to anyone who wants to try it out and most likely that phase will -not- require a NDA.
That's how these things usually pan out. Obviously the details vary some from game to game but that's the basic outline I'd expect CoT to follow.
